Hot Cocoa Mix
What you’ll need:
-½ cup cane sugar
-¼ cup plus 2 tbsp semi sweet chips
-¼ cup plus 1/8 cup cocoa powder
-Pinch of sea salt
-½ tsp ground vanilla beans (optional)
Cookie Cocoa
What you’ll need:
-2 ½ cups coconut milk
-½ cup hot cocoa mix
-5 Bakeology Chocolate Chip Cookie Bites, broken into fine crumbs
-Vegan marshmallows for topping
Make the hot cocoa mix by adding cane sugar, semi sweet chocolate chips, cocoa powder, sea salt & ground vanilla beans to a food processor & breaking down until chocolate chips are a fine consistency. Set aside.
In a saucepan over medium heat, heat up coconut milk, Chocolate Chip Cookie crumbs, & ½ cup of the Hot Cocoa Mix, stirring consistently. Once hot, but not boiling, turn off heat & serve immediately.
