Chocolate Chip Cookie Peanut Butter Ice Cream

Base
What you’ll need:
  • 1 cup cashews
  • 2 cups milk of choice (I used almond milk)
  • 1⁄4 cup water
  • 2 tbsp coconut oil
  • 2 tbsp peanut butter
  • 1 tbsp vanilla extract
  • 1⁄2 cup maple syrup
  • 2 tbsp arrowroot starch
  • Pinch of sea salt
Particulates
What you’ll need:
  • 1⁄4 cup vegan chocolate chips
  • 1⁄4 cup vegan peanut butter chips
  • 1⁄2 cup-1 cup crushed Bakeology Cookie Bites

Blend ingredients in a Vitamix on high for 5 minutes, until the mixture is warm to hot.

Add mixture to your ice cream machine.

Once you see mixture begin to thicken (after approx 20 minutes) add​ “particulates

Let it do its thing for about 20 more minutes, until mixture has thickened. Freeze for at least 4 hours & dig in.
