What you’ll need:
- 1 cup cashews
- 2 cups milk of choice (I used almond milk)
- 1⁄4 cup water
- 2 tbsp coconut oil
- 2 tbsp peanut butter
- 1 tbsp vanilla extract
- 1⁄2 cup maple syrup
- 2 tbsp arrowroot starch
- Pinch of sea salt
What you’ll need:
- 1⁄4 cup vegan chocolate chips
- 1⁄4 cup vegan peanut butter chips
- 1⁄2 cup-1 cup crushed Bakeology Cookie Bites
Blend ingredients in a Vitamix on high for 5 minutes, until the mixture is warm to hot.
Add mixture to your ice cream machine.
Once you see mixture begin to thicken (after approx 20 minutes) add “particulates”
Let it do its thing for about 20 more minutes, until mixture has thickened. Freeze for at least 4 hours & dig in.
