Raspberry Thumbprints


What you'll need:
  • 1 cup Gluten-Free Flour of Choice ( I used 1⁄2 c Almond Meal & 1⁄2 cup Rice Flour)
  • 1⁄3 cup Cane Sugar or Maple Sugar (granulated)
  • 1 tbsp Ground Flax Meal
  • 1⁄4 cup plus 2 tbsp Refined Coconut Oil
  • 2 tsp cold water
  • 2 tsp Vanilla Extract
  • 1⁄8 tsp Almond Extract
  • 1⁄4 cup Raspberry Jam

Pre-heat oven to 325 degrees F.

In a mixer, combine GF Flour, Sugar, & Flax. Add Coconut Oil until dough is piece, like cornmeal. Add water and Extracts.

Mix until everything is combined & is a soft consistency.

Scoop out with a tablespoon or spoon of choice.

Make a hole in the middle of each sphere (with your finger).

Scoop a tiny amount of Raspberry Jam in the middle of each sphere. Bake until lightly golden brown, about 15 minutes.
